![]() The nationwide appreciation of this phenomenon through a popular festival known as hanami (flower-viewing) celebrates the beauty of these delicate flowers, a deep rooted cultural sensibility that appreciates the ephemerality of existence. Sakura, or Cherry flowers, bloom in Japan in spring they only last a couple of weeks. The thoroughly yasashi (kind) and enlightened couple spent almost all their life’s savings to set up two cultural centres in Kolkata and Santiniketan dedicated to Japan-India exchanges, together with other Japanese contributors who loved India.Īfter a brief visit to his house in Ichikawa upon my arrival in Japan, Azuma- sensei took me for a walk through a beautiful Sakura-strewn avenue, giving me a quick tour of my University. Both of them taught Bengali to Japanese learners, and provided shelter and support to innumerable Indians visiting Japan. An ardent admirer of Bengal and India, Azuma- sensei remained engrossed in the mission of introducing Japan and India to one another, over five decades, closely supported by his wife Keiko. He could converse in impeccable Bengali, that too with incredible wit. He was also a cultural ambassador of Indo-Japanese friendship, which started as early as the 6th century AD, with the introduction of Buddhism in Japan via China and Korea. I observed that Professor Azuma was revered even by the ground crew of an Indian airlines company, not as a frequent flyer, but as a scholar of considerable repute. Waking up to an in-flight announcement in the double-decked aircraft, I could see the snow-clad Mount Fuji in the middle of a garden of fleeting clouds through a narrow window, offering a view of an infinite universe. His eminence got our economy-class flight tickets upgraded to the executive class for free, with all the usual luxuries, including a sumptuous salad for dinner, a pair of socks and slippers, a frail toothbrush, and a silken eye-mask. Having completed my post-graduation from the Department of English at Visva-Bharati a few months earlier, I was on my way to Japan to study Japanese for a year at Reitaku University under Professor Azuma’s supervision. My first experience of visiting Japan and boarding an aircraft was fascinating. I owe my interest in Japan to Professor Azuma and would also trace my desire to have a Japan-inspired house, to him. He wrote primarily on Poet Rabindranath Tagore (1861-1941)- the first Asian to win the Nobel Prize in literature- and Tagore’s exchanges with Japan. I would assist him in editing his Bengali books and essays whenever he visited Santiniketan. At the time, he was a Professor of Reitaku University and also Professor Emeritus at the University of Tsukuba. My Japanese teacher at school, Padmaruchi Mukhopadhyay, introduced me to Azuma Kazuo and I addressed him as Azuma- sensei. Sensei, which evokes immense respect in Japan, means teacher in Japanese. In the quietude of a small city in India called Santiniketan or ‘the abode of peace’- Kokoro is constructed as a house of memories with stories to tell. An ancient rock, possibly shaped by rivers over ages, is now a mossy gravestone in the garden. The wide door of the living space, when opened, invites the surrounding nature inside. and also to the script that represents it- a favourite of many calligraphers. ![]() Drawn to its meaning, I have named this house Kokoro, which is ‘heart’ in Japanese. As I move forward, a kettle hanger greets me at the hearth facing an alcove. ![]() Wooden screens and a vase at the entrance, a split curtain on my right, a step chest on my left. ![]() Therefore, prepare a little bit more than usual. Rice bowl dishes (or what we call “donburi”) typically serve more rice per person to go with the food on top of the rice. I recommend making dashi either from scratch or with a dashi packet. Make extra dashi (Japanese soup stock) so you can use it for gyudon and miso soup to go with the meal. For well-marbled beef, it’s easier to flash freeze and cut the semi-frozen meat. It’s also easy to thinly slice your own meat. Well-marbled beef will never become chewy after being simmered in the sauce. When the onion is cooked, it imparts a natural sweetness to the dish. Thinly slice the onion so it will become tender and sweeter quickly.Serve the simmered beef and onion over steamed rice in large bowls. ![]() Put the sauce ingredients, sliced onions, and beef in a large frying pan and start cooking.Garnish: green onions for the color and shichimi togarashi for a spicy kick.So simple and highly effective in creating robust flavor! Sauce: The sauce is a complementary balance of sweet and savory, made with dashi (Japanese soup stock), sake, mirin, soy sauce, and sugar.Onion: Sliced onions give sweetness to the dish and are a perfect pair with tender beef.Alternatively, you can always slice your own. The paper-thin slices are essential for achieving authentic gyudon (too thick, and your beef will be chewy), and you can often find packages of thin-cut beef at Japanese or Asian supermarkets. Thinly sliced beef: For this recipe, I recommend chuck or rib eye.The ingredients to make this one-pot dish at home are simple. It was most popular among business people and young, single men before reaching the general Japanese public. Gyudon in Japan is known to be a quick, tasty meal that is also cheap. How to Make Gyudon Ingredients You’ll Need If you want to make gyudon just like they do at Yoshinoya, I have a recipe here. Matsuda is the owner of Japan’s most famous Tokyo-based, beef bowl chain, Yoshinoya. The name “gyudon” was finally coined by Eikichi Matsuda in the late 1800s. Apparently, the chef of an izakaya called Isekuma in my hometown of Yokohama was the first person to serve gyunabe in 1862! People began pouring their leftover gyunabe broth over rice, and soon restaurants began to serve this as a cheaper alternative called “gyumeshi” (牛飯). Once Western culture was introduced to Japan in the late 19 th century, gyunabe-beef and onion stewed with miso paste-became extremely popular. Consuming meat went against Buddhist philosophies, and eating farm animals that were useful for work was largely discouraged. Up until this point, Japanese people were strictly prohibited from eating beef for both religious and practical reasons. The gyudon that we know and love today actually originated from a beef hot pot dish called “gyunabe” (牛鍋) during Japan’s Meiji Era (1868-1912). “Gyu” (牛) translates to “beef” while “Don” (丼) refers to the type of bowl it’s served in. Like other donburi, Gyudon, or Japanese Beef Bowl, is always served over a warm bowl of freshly steamed rice. Today, I’ll show you how I make this weeknight favorite at home. While every household in Japan makes gyudon a little different, the core ingredients remain the same: thin slices of beef, onion, and sweet and savory sauce served over steamed rice. Not only is this hearty rice bowl extremely simple to put together, but it’s also famous for being a quick, nutritious meal that never fails to satisfy. Gyudon (牛丼) is classic comfort food that has had its place in Japanese cuisine for over 150 years. It has been a staple in Japanese cuisine for over 150 years! It’s a perfect quick meal for a busy weeknight! Thinly sliced beef and tender onions cooked in savory-sweet sauce, Gyudon, or Japanese Beef Rice Bowl, is synonymous with comfort. ![]() NGEN radio is YOUR online digital music experience for the now generation. Male Wistar rats were subjected to 30-min ligation of left anterior descending coronary artery and 120-min reperfusion. In this study, we aimed to assess the possible cardioprotective effect of sumatriptan in a rat model of I/R injury. Sumatriptan, which is mainly used to relieve migraine headache, has recently been shown to exert anti-inflammatory properties. Myocardial ischaemia and reperfusion (I/R)-induced tissue injury is associated with alteration in activity of inflammatory system and nitric oxide pathway. Ischemic heart disease is a leading cause of death on a global scale, placing major socio-economic burdens on health systems worldwide. These studies offer new insights into the development of strategies that may improve therapy of visceral pain conditions using already available medications. Actions at 5HT1(B) receptors within the RVM offer an additional potential site of action for the modulation of visceral pain by triptans. Our findings suggest that sumatriptan suppresses either inflammatory or noninflammatory visceral pain, most likely through peripheral 5HT1(B)/(D) receptors. Microinjection of 5HT1(B) or 5HT1(D) antagonists into the RVM did not block the effects of systemic sumatriptan. This was blocked by local microinjection of the 5HT1(B) antagonist but not the 5HT1(D) antagonist. Sumatriptan administered into the RVM similarly produced dose- and time-related blockade of referred hypersensitivity in both visceral pain models. Systemic sumatriptan elicited a dose- and time-related blockade of referred hypersensitivity in both models that was blocked by systemic administration of either 5HT1(B) or 5HT1(D) antagonists. Effects of sumatriptan within the rostral ventromedial medulla (RVM), a site of descending modulation of visceral pain, was determined by (1) testing the effects of RVM administration of 5HT1(B/D) antagonists on systemic sumatriptan action and (2) determining whether RVM application of sumatriptan reproduced the actions of systemic drug administration. The effects of systemic sumatriptan on referred hypersensitivity were tested in both models. Noninflammatory irritable bowel syndrome was induced by intracolonic instillation of sodium butyrate. Pancreatic inflammation was induced by intravenous injection of dibutyltin dichloride. The possible efficacy of sumatriptan was investigated in 2 models of visceral pain. Sumatriptan is used specifically to relieve headache pain. |
